Why do Apostrophes come after and before plurals?

The apostrophe can be used to represent a missing letter. For example, 'can't'. Here it is used to represents the O. It is used in plurals as it couldn't be 'girlss' because that would be silly. In 'It's a rainy day' the ' is used as the I is missing.
